Re-purchase the audiobook from Apple BookStore
Usually an Apple Audiobook will be more expensive than an Apple Digital book, we can’t directly request to exchange digital book with an Audiobook. But we can apply a full refund for the already purchased digital book from the Apple Book Store, and then re-purchase the audiobook that you want from the Apple Book Store again. Go to reportaproblem.apple.com, Sign in with your Apple ID and password, Tap or click "I'd like to.", choose "Request a refund.", choose the reason why you want a refund, then choose Next, choose the item or items that you bought, then choose Submit.
Use AudioBook.app to convert Digital Book to AudioBook
When you purchase a regular digital book from the BookStore, it will store a physical .epub file on your Mac for offline reading.
